Fish Head Soup
Sopa de cabeza de pescado is the thrifty, intensely flavoured Sunday soup of Mérida's fishing-adjacent kitchens, built on the parts of the fish most cooks in other countries discard. The heads of large reef or gulf species — grouper (Epinephelus morio) and snapper (Lutjanus campechanus) are the workhorses — yield a gelatinous, mineral-rich stock that no fillet can replicate. A tomato-based sofrito seasoned with recado blanco and sour orange ties the broth to the Yucatecan pantry, keeping the soup firmly in its regional lineage rather than in any generic 'fish soup' tradition. It belongs to the Sunday comida tradition Mérida calls 'llega la familia' — the weekly family meal where the table holds the family together — and it is deliberately substantial, not delicate.
The recipe is being written into the canon.
