Sopa seca de fideos (dry noodle soup) is Mexico's technique for toasting and cooking thin vermicelli noodles (fideos) in a tomato sauce — dry-toasted in oil until golden, then the tomato salsa is added and absorbed as the pasta cooks. The result is a pasta that has absorbed all the liquid, with no broth remaining — hence seco (dry). It is one of Mexico's great comfort foods, eaten as a first course or a main at lunch.
