Coconut Sorbet
Sorbete de coco is a dairy-free frozen coconut preparation made from freshly pressed coconut milk, coconut water, and sugar — the workhorse of Yucatecan sorberterías and street cart culture. In Yucatecan usage, sorbete (sorbet) is strictly distinguished from helado (ice cream): no cream, no eggs, no shortcuts. The base is cold-steeped overnight, which is where the dish lives or dies — a rushed base yields grainy ice and thin flavour. This is the same recipe that anchors Esquimos, the chocolate-dipped coconut paletas that sell out before every other flavour on the cart.
The recipe is being written into the canon.

Quality Hierarchy
01
Fresh whole coconuts with audible liquid sloshing inside — no packaged coconut water or pre-grated flesh
02
Mexican vanilla extract from Papantla, Veracruz, not imitation vanillin
03
White cane sugar; do not substitute brown sugar or piloncillo, which alter the clean coconut profile
II
Sensory Tests
◇After pressing: the coconut milk should be opaque white and coat the back of a spoon lightly — thin or translucent milk means insufficient extraction
◇After dissolving sugar: tilt the pan; the liquid should run clear and glassy with no visible granules on the pan walls
◇After churning: the sorbet should hold a soft ribbon when spooned and have no visible ice crystals on the surface
◇After overnight freeze: the finished block should release cleanly from a metal scoop without crumbling or weeping
