Stoccafisso all'Anconetana
Stockfish (air-dried cod) braised in the Ancona style with olive oil, onion, anchovy, tomato, olives, capers and rosemary — one of the great fish preparations of the central Adriatic coast. The stockfish must be beaten and soaked for 48 hours before cooking to fully rehydrate. It is then layered in a terracotta pot with the aromatics and braised very slowly until it holds its shape but yields to a fork.

The Method

Beat the dried stockfish firmly on all sides with a wooden mallet. This breaks the fibres and allows even rehydration. Submerge in a large vessel of cold water and soak for 48 hours, changing the water every 12 hours. At the end of soaking, the fish should be fully pliable and significantly enlarged; it yields without resistance when pressed.

Drain the stockfish and cut into large, even portions. Lay half the sliced onion across the base of a terracotta pot. Arrange the anchovy fillets, rosemary sprigs, olives, capers and lemon zest over the onion. Place the stockfish pieces in a single layer on top, then cover with the remaining onion, tomatoes and any remaining aromatics. Pour the white wine and olive oil evenly over the layers. Do not add water. The layered structure must remain intact throughout cooking; do not stir at any point.

This is where the dish lives or dies: set the pot over the lowest possible heat — the surface must never boil, only tremble with the faintest, intermittent shudder. If the liquid approaches a boil at any point, the fish will break to shreds and the silky, gelatinous texture that defines this preparation is lost. Maintain this barely-trembling simmer for 2 to 3 hours. When the stockfish holds its shape but yields cleanly to a fork with no resistance, and the braising oil has taken on a deep amber, aromatic colour, the dish is ready.

Remove the pot from the heat. To prevent sticking, shake the pot gently by its handles — never use a spoon or spatula inside. Allow the dish to rest, uncovered, for 10 minutes before serving. The braising liquid should have reduced to a rich, glossy emulsion that coats the fish.

Reserve — Stockfish from Røros or Lofoten dried a full winter season; cold-pressed single-estate Marche olive oil; salt-packed capers from Pantelleria, rinsed and dried; hand-stoned Taggiasca olives.

Estate — Named Norwegian stockfish sourced from a specialist importer; good Marche or Umbrian DOP olive oil; capers in brine, well-rinsed; quality oil-cured olives.

Market — Stockfish from a reliable fishmonger or Italian deli, correctly soaked; a reputable Italian extra-virgin olive oil; standard supermarket capers and stoned olives.

House — Pre-soaked stockfish or salt cod (baccalà) substituted at need; any clean extra-virgin olive oil; jarred capers and tinned olives — the character of the dish is diminished but the method holds.
IV
Sensory Tests
◇Touch. After 48 hours of soaking, the stockfish is fully pliable and yields without resistance when pressed — no firm or rubbery patches remain.
◇Sight. During braising, the surface trembles with only the faintest, intermittent movement — no rolling boil, no vigorous bubbling.
◇Touch. At 2–3 hours, the fish holds its shape as a portion but a fork passes through it with no resistance.
◇Sight. The braising liquid has reduced to a glossy, lightly emulsified sauce of deep amber colour that coats the back of a spoon.
◇Where it lives or dies. The dish lives or dies on absolute control of heat: the braising liquid must never boil — only tremble — for the full 2 to 3 hours, or the stockfish collapses to shreds and the gelatinous structure is irretrievable.
