Surströmming: The World's Most Pungent Food

Surströmming (sour herring) is fermented Baltic herring — salted in barrels, left to ferment for 6 months, then tinned. The fermentation produces hydrogen sulphide, propionic acid, and butyric acid — compounds that give surströmming its legendary smell, often compared to rotten eggs, sewage, and death simultaneously. The tin bulges from the gas pressure. It must be opened outdoors (and some Swedish apartment buildings ban indoor opening). Despite the smell, surströmming is a genuine delicacy to its devotees: the flesh, once past the initial olfactory assault, is salty, tangy, umami-rich, and complex. It is eaten on tunnbröd (thin flatbread) with potatoes, onion, and sour cream, traditionally at a surströmmingsfest (fermented herring party) in late August.

The Method

Set a basin of cold water outdoors. Submerge the bulging tin fully. Pierce the lid under the waterline and allow the pressurised liquid to discharge into the basin. Open the lid completely while still submerged. The water contains the spray and suppresses the initial olfactory impact. Remove the fillets and rinse them lightly under cold running water. The smell at this point is severe; this is expected and correct.

Boil the potatoes in salted water until a knife meets no resistance at the centre. Drain, allow to cool slightly, peel, and slice into rounds approximately 5 mm thick. The surface should be dry and floury at the cut.

Lay a sheet of tunnbröd flat. Place two or three potato slices across the centre, then lay a single surströmming fillet — or a portion of one — on top of the potato. Add a few rings of raw onion and a spoonful of sour cream. This is the assembly that decides the dish: the potato and sour cream temper the salt and acid of the fillet, the onion cuts the fat, and the tunnbröd binds the whole. Too much fish and the salt overwhelms; too little and the dish has no point. The balance is where the dish lives or dies.

Roll or fold the tunnbröd tightly around the filling. The bread should hold its shape without splitting. Serve immediately, outdoors or in a well-ventilated space. The flesh, once assembled and tasted past the nose's anticipation, is salty, tangy, and umami-rich — noticeably milder than the smell predicted.

Quality Hierarchy

Reserve — Surströmming from a small northern Swedish producer using Baltic herring caught and salted in the same season, fermented the full six months, opened at a surströmmingsfest in late August for which it was the occasion.

Estate — A named Swedish brand of recognised standing, tin visibly bulging and within the current season's production, served on hand-made tunnbröd with farm sour cream and freshly boiled waxy potatoes.

Market — Any commercially produced surströmming tin in good condition, paired with good-quality commercial tunnbröd and full-fat sour cream; eaten outdoors in the traditional manner.

House — The same tin, opened indoors against all advice, served on whatever flatbread is available, in a building whose occupants have been forewarned.

Sensory Tests

◇Sight. The tin bulges visibly before opening — this is the natural result of fermentation gases and confirms the product is alive and correctly developed.
◇Smell. On opening underwater, the smell is immediate, severe, and compound — hydrogen sulphide, propionic acid, butyric acid — correctly described as rotten eggs, sewage, and something beyond. This is the expected and correct state of the product.
◇Touch. The fillets, once removed and briefly rinsed, are soft and yielding — not mushy, not firm. The flesh should hold together when lifted.
◇Sight. The assembled tunnbröd roll holds its shape without splitting along the seam; the potato slices are visible at the open ends.
◇Where it lives or dies. The assembly of fillet, potato, onion, and sour cream on tunnbröd must be balanced: the potato and cream exist to temper the fillet's salt and acid, and if that ratio is wrong, neither the smell nor the taste can be forgiven.
