Small Steamed Tamales with Black-Eyed Peas

Vaporcitos de x'pelon (the x'pelon is the black-eyed pea, Vigna unguiculata, grown across the Yucatecan milpa) are finger-sized tamales steamed in banana leaf, built from achiote-tinted masa studded with parboiled black-eyed peas, ground toasted squash seeds, and chopped hard-boiled egg. They live at the cantina table and the party spread, not the market stall — that territory belongs to their oversized cousin, the Pime. The construction is lean: no meat, no broth-based sauce inside the parcel, just the mineral sweetness of the bean against the fat of the masa and the nuttiness of the pepita. Tomate frito and chile tamulado arrive at the table separately, where diners build each bite themselves.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh x'pelon harvested from a Yucatecan milpa at the green-mature stage, masa made from dried and nixtamalised local maize ground the same day, pepita molida toasted and ground to order
02
STANDARD: Dried black-eyed peas (Vigna unguiculata) soaked overnight and fully cooked before use, quality commercial masa harina (Maseca or equivalent) enriched with lard, pre-ground pepita purchased within two weeks
03
AVOID: Canned beans (too wet, skins split), masa made from corn flour without nixtamalisation, pre-mixed seasoned masa products intended for other regional tamale styles

Sensory Tests

◇Masa consistency before wrapping: press a small ball between your palms — it should hold its shape without cracking at the edges and leave no greasy film on the skin
◇Bean doneness after parboiling: bite one in half — the interior should be creamy white and fully cooked through, with no chalky resistance at the core
◇Steam doneness: unwrap one test tamal at the 45-minute mark and peel the leaf back — the masa surface should be matte, not shiny, and pull away from the leaf in one clean piece
◇Pepita distribution: after mixing beans into masa, pull a small piece and flatten it — you should see flecks of ground seed throughout, not concentrated in one area
