Thai Breakfast Preparations (Khao Tom and Jok)

Two rice preparations that define the Thai breakfast table — khao tom (boiled rice soup, the Thai equivalent of congee, but lighter and less viscous) and jok (thick rice porridge, the genuine Thai congee, of Chinese origin, cooked until the rice grains have completely dissolved into a thick, smooth cream). Both are served with accompaniments: pickled vegetables, fried garlic, soft-boiled egg, sliced ginger, and the ubiquitous table condiment of prik nam pla (Entry T-15).

The Method

1
KHAO TOM — Bring the stock to a steady simmer over medium heat, then add the cooked rice and stir to separate the grains so each one heats evenly and releases just enough starch to round the broth without clouding it. Season with fish sauce and simmer for 8–12 minutes, stirring occasionally, until the grains are swollen and tender but still identifiable. The broth must remain light and distinctly fluid — it must not thicken into a porridge — and should run clear and clean at the ladle when the soup is ready.
From the canon — Fish sauce — nam pla — is the universal salt of the Thai kitchen. Fish Sauce (Nam Pla): Selection and Use →
2
JOK — Combine the raw rinsed rice and stock in a heavy pot, bring to the boil, then reduce to the lowest possible simmer, because a vigorous boil will scorch the bottom before the grains have time to dissolve. Cook, stirring frequently, for 45–60 minutes. This is where the dish lives or dies: the rice must be driven past softness, past porridge, until every grain has completely dissolved into a thick, smooth, homogeneous cream with no discernible grain remaining — the surface will be viscous and slow-moving, and a spoon drawn across the top should leave a brief, clean furrow. Season with fish sauce.
3
Soft-boil the eggs by lowering them into already-boiling water and cooking for exactly 6 minutes, so the white sets while the yolk stays fluid at its centre rather than chalking through. Transfer immediately to cold water to stop the carry-over heat from pushing the yolk further. Peel when cool enough to handle and confirm the yolk is still yielding by pressing gently with a finger.
4
Arrange the accompaniments — pickled vegetables, fried garlic in its oil, ginger matchsticks, and halved soft-boiled eggs — in small dishes or directly alongside each bowl, so every diner can adjust the balance of sharp, rich, hot and savoury to their own taste. Set prik nam pla on the table and ladle the khao tom or jok into warmed deep bowls, warming the bowls first so the soup does not lose its heat on contact with cold ceramic. The finished bowl should carry a clean, savoury steam; the smell of raw starch must be entirely absent.

Quality Hierarchy

01
Reserve — Aged jasmine rice from a single-origin Thai producer; home-rendered pork stock simmered from bones overnight; eggs from a known flock with deep-orange yolks; house-made prik nam pla with premium fish sauce such as Tiparos or Megachef.
02
Estate — Good-quality Thai jasmine rice (KDML 105 grade); fresh pork or chicken stock made the same day; free-range eggs; pickled vegetables sourced from a Thai grocer.
03
Market — Standard supermarket jasmine rice; a clean, unsalted bought stock or light broth; medium-grade eggs; shop-bought pickled mustard greens or similar.
04
House — Any long-grain white rice; water seasoned with stock powder or bouillon; ordinary eggs; bottled fish sauce and pre-fried garlic from a jar.

Sensory Tests

◇Sight. Khao tom: the broth remains fluid and clear; the rice grains are swollen but individually visible and intact.
◇Sight. Jok: the surface is uniformly thick and slow-moving, with no grain visible; a spoon drawn across leaves a brief furrow that closes slowly.
◇Touch. Jok: the porridge coats the back of a spoon thickly and falls in a slow, heavy ribbon — not a thin pour, not a stiff paste.
◇Touch. Soft-boiled egg: the white is set firm to the finger; the yolk yields with gentle pressure, indicating it remains fluid at centre.
◇Smell. Both preparations: the aroma is clean and savoury with no trace of raw starch, indicating the rice has cooked through entirely.
◇Where it lives or dies. Jok lives or dies on sustained low heat and constant attention: the rice must dissolve completely into a smooth cream — any residual grain means the porridge is undercooked and the dish has not been made.
