Gueta Binguis
Gueta binguis are masa cakes from Juchitán, on the Isthmus of Tehuantepec, where Zapotec market cooking has remained largely unchanged for generations. Dense ovals of tamale-grade masa — enriched with lard, the fermented pork fat sediment known as zorrapa or asiento, and a generous hand of wild epazote (Dysphania ambrosioides) — enclose whole dried shrimps and a brick-red molito built from toasted unhulled pumpkin seeds, tomato, jalapeño, and achiote. The shrimp heads, eyes pulled out and discarded, go into that same sauce, adding a concentrated, almost funky ocean depth that heads-off shrimp simply cannot replicate. Baked rather than steamed, the exterior sets to something firmer than a tamale but softer than a tostada — a category entirely its own. Diana Kennedy documented this preparation in Juchitán and placed it among the Isthmus dishes most at risk of disappearing from home kitchens as market vendors aged out.
