Mucbilpollo — Large Festival Tamal Baked in Banana Leaves

Mucbilpollo (muuk, 'buried'; kaax, 'hen' in Maya) is the centrepiece of Hanal Pixán, the Yucatecan Feast of the Spirits observed across the last days of October and into November. Two thick masa rounds are shaped into lidded pies, packed with shredded chicken or pork stewed in achiote-red K'óol rojo sauce, folded into banana leaves, and baked low and slow until the exterior crust cracks under the tooth. Whole pies can span half a metre across; even domestic versions command a dinner plate. The dish travels in the beds of trucks across the peninsula during the three-day festival, still wrapped in their scorched leaf vestments. The benchmark of a correctly cooked Mucbilpollo is a jaw-cracking crisp edge giving way to masa that has absorbed the bright red achiote gravy — not a soft, steamed interior.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Masa ground from locally grown, properly nixtamalized Yucatecan field corn (maíz criollo); x'pelones sourced from a Yucatecan market; baked in a functioning pib.
02
STANDARD: Good-quality masa harina (Maseca or equivalent) hydrated with lard and chicken stock; store-bought black-eyed peas parboiled fresh; baked in a conventional oven.
03
ACCEPTABLE: Masa harina hydrated with water and vegetable shortening; canned black-eyed peas, rinsed; foil substituted for banana leaves as a last resort — flavour suffers noticeably.

Sensory Tests

◇Sealed seam: press the pinched edge between thumb and forefinger before wrapping — it should feel as solid as a pie crust join, with no wet masa oozing out.
◇Mid-bake check at 60 minutes: the leaf exterior will have darkened to deep olive-brown and the kitchen should carry a pronounced toasted-corn and achiote aroma.
◇Doneness: knock the exposed top masa with a knuckle after opening the leaf — a hollow, slightly firm sound indicates the crust has set. Soft and yielding means it needs another 10–15 minutes.
◇Interior sauce: when sliced, the K'óol rojo inside should be thick enough to hold its shape briefly before spreading — if it runs immediately, the masa absorbed too little sauce during baking.
