Tamales Campechanos with Dogfish and Tomato Sauce

These tamales belong to Campeche, the port state that faces the Gulf of Mexico and has traded in seafood since the pre-Columbian era. The masa is enriched with lard and wrapped in banana leaves, enclosing a filling of dogfish (cazón, Mustelus canis or a closely related species of the Gulf) braised with tomato, chile, and epazote. Unlike the highland Mexican tamal, which tends toward a drier, corn-husk-wrapped format, the Campechano version is moist, fragrant, and deeply tied to the sea. The tomato sauce that accompanies the finished tamal is cooked separately and spooned over at the table, giving the cook control over moisture and heat. This is a feast-day preparation; its labour reflects the respect Campechano cooks give their signature ingredient.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Wild-caught Gulf cazón (Mustelus species) from day-boat fishermen, masa ground fresh from dried maíz criollo nixtamalized at home, banana leaves cut and used the same day
02
STANDARD: Fresh farmed dogfish or substitute soupfin shark, commercially prepared fresh masa from a tortillería, banana leaves thawed from frozen
03
ACCEPTABLE: Skinless, boneless shark steak from a reliable fishmonger; reconstituted masa harina (Maseca or equivalent) beaten with extra lard to compensate for dryness; grocery-store banana leaves

Sensory Tests

◇Masa float test: a hazelnut-sized ball dropped into cold water must rise to the surface within 3 seconds — if it sinks, the lard ratio is too low.
◇Filling colour: the tomato sauce should shift from bright red to a burnt-orange-brick after frying; if it stays vivid red, it has not reduced enough and will make the tamal soggy.
◇Doneness pull: a cooked tamal's masa peels from the banana leaf in one clean motion. Any sticking or wet sheen means it needs 10 more minutes of steam.
◇Filling texture: flaked dogfish in the finished tamal should be moist and tender, not chalky or rubbery. If it's tight, the fish was overcooked at the filling stage.
