Guava, Maraschino Cherry, and Sherry Frozen Custard

Helado de crema morisca — frozen custard in the Moorish style — sits at the intersection of Andalusian confectionery and the tropical larder of the Yucatán Peninsula. The name morisca (Moorish) signals the lineage: sugar-enriched egg custards carried from Iberia through the colonial kitchen, meeting guava and maraschino cherry on Yucatecan soil. Dry sherry binds the flavours, its oxidative nuttiness cutting the sweetness of the fruit without overpowering the custard base. The result is a frozen dessert with genuine complexity — floral, winey, and faintly tart — that belongs to the tradition of Mérida's panaderías and pastelerías rather than the street-corner paleta cart.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Freshly harvested Psidium guajava with deep pink flesh, pressed and strained same day; marasca cherries preserved in their own liqueur; aged amontillado sherry with genuine oxidative complexity; Cinnamomum verum (Mexican canela) ground to order.
02
STANDARD: Good-quality guava paste thinned with a little water and strained; commercially bottled maraschino cherries in syrup; a clean fino sherry; pre-ground Mexican cinnamon no older than six months.
03
AVOID: Cassia cinnamon (too harsh and camphorous); cream sherry (excess sweetness collapses the balance); guava paste with added artificial flavour; frozen guava pulp with high water content added without adjustment, which produces an icy texture.

Sensory Tests

◇Custard readiness: drag a finger across the coated spoon — the line must stay sharp and not fill back in for at least 5 seconds.
◇Guava purée: the strained flesh should be uniformly smooth with no gritty seed fragments; a pale pink to deep rose colour signals ripeness.
◇Churn completion: the mixture should look matte rather than glossy, have increased by roughly one-third in volume, and leave a clean trail as the paddle moves.
◇Sherry balance: taste the finished base before churning — a faint winey warmth should linger at the back of the palate for 2–3 seconds, then fade cleanly.
