Hojaldra de jamón y queso: Sweet and Savory Ham and Cheese Pastry

Hojaldra de jamón y queso is a Yucatecan pan dulce built from puff pastry — hojaldra, the local rendering of French pâte feuilletée — layered with smoked ham, aged cheese, béchamel, and pickled jalapeño (Capsicum annuum) rings, then finished with a blizzard of granulated sugar before it comes out of the oven. The sweet-over-savory combination is not an accident or an affectation; it reflects a taste for contrast that runs through Yucatecan baking. Home bakers and señoras working out of their own kitchens sell both the finished pastry and thick slabs of raw hojaldra dough to neighbours and small bakeries throughout the peninsula. Served at room temperature at breakfast or mid-morning, a single slab is simultaneously flaky, creamy, salty, faintly spicy from the chile, and sugared on top — a combination that rewards the cook who trusts it. The broader tradition of layering masa or enriched doughs with pork products and cooked greens across southern Mexico finds a distant but illuminating parallel in Diana Kennedy's documentation of Oaxacan home cooking. Her Sopa de Acelgas y Pasta (Oaxaca al Gusto, p. 137) pairs Swiss chard (Beta vulgaris subsp. cicla) with chicken livers and toasted pasta in a reduced tomato broth — a soup built on the same logic of contrast and layering that governs the hojaldra: fat against acid, soft against crisp, mild against assertive. Kennedy's method calls for frying 7 oz (200 g) of pasta de pluma or orzo in 3 tablespoons of vegetable oil until lightly browned, then setting it aside while onion, garlic, and 12 oz (350 g) of chopped tomatoes are sautéed and reduced. Four large chicken livers are simmered separately in a portion of the 8 cups (2 L) of hot lightly salted chicken broth until just pink inside, preserving their texture before the components are united. The tomato base is combined with the remaining broth, brought to a boil, and 4 tightly packed cups (1 L) of coarsely chopped Swiss chard, a small bunch of flat-leaved parsley, and the browned pasta are added; the pot simmers for 20 minutes before the livers are returned for a final 5 minutes. Parsley is removed and crisp-fried croutons finish the bowl. The oven temperature for baking hojaldra typically runs 190–200 °C (375–390 °F), hot enough to open the laminated layers while caramelising the sugar crust without burning it.

The recipe is being written into the canon.

Sensory Tests

◇Béchamel is ready when a spoon dragged across the surface leaves a clean channel that holds its shape for 3 seconds
◇Pastry is done when the underside sounds hollow if tapped and the visible layers at the cut edge show distinct, dry separation
◇Sugar crust is correct when it shifts from white to pale amber and sets hard within 2 minutes of leaving the oven
◇Correct internal temperature of the filling at the centre: 74°C (165°F) minimum
