Pollo Adobado Relleno y Su Pasta
A whole chicken from Ixtepec, in the Isthmus of Tehuantepec region of Oaxaca, rubbed all over with a deep chile-based adobo and left to steep before being packed with a savory pasta stuffing, then slow-roasted under greased paper until the meat is tender enough to pull from the bone. The technique belongs to the cooking traditions of the Tehuantepec Isthmus, where home cooks build complex flavor through patience — long marinating, slow heat, and regular basting — rather than through any single dramatic step. Diana Kennedy recorded this version in Ixtepec as part of her documentation of regional Oaxacan cooking, noting how the adobo paste serves double duty: it seasons the bird and bastes into the pan juices that are then spooned back over the skin throughout roasting.

What to Pour
The adobo delivers layered, brick-red heat — dried chiles (almost certainly mulato and pasilla negro from the Isthmus pantry) tempered by clove, cumin, thyme, and Oaxacan oregano, with vinegar cutting through the fat and keeping the finish bright rather than heavy. Beneath the skin, the long steep drives those aromatics deep into the meat, so each pull of chicken carries smoke, spice, and a faint sour warmth all at once. The pasta stuffing — a firm, custard-set vegetable interior seasoned with commercial mustard — provides a cool, yielding contrast to the charred, lacquered exterior, and the whole bird arrives to the table smelling of basted drippings, toasted chile, and rendered chicken fat.
