Mestizas — Grilled Pork and Pineapple Tacos with Cheese on Corn Tortillas

Mestizas are the corn-tortilla branch of Mérida's taquería trilogy — the same pastor-spiced, achiote-rubbed pork and caramelised pineapple that appear on tacos árabes (pita) and gringas (flour tortilla), but here grounded in a hand-pressed nixtamal tortilla. The name itself marks the cultural layering: the taco is mestiza in the literal sense, blending the Levantine shawarma technique that Lebanese immigrants brought to the Yucatán Peninsula in the late nineteenth and early twentieth centuries with the achiote and citrus vocabulary of Yucatecan cooking. Cheese — uncommon in traditional Yucatecan food — is the concession to taquería modernity, melted directly onto the tortilla on the comal. These are street-counter food, assembled to order, eaten standing.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Pork shoulder marinated overnight in house-made recado rojo built from whole dried annatto seeds toasted and ground; pineapple grilled over hardwood charcoal; fresh nixtamal tortillas pressed and cooked to order; quesillo pulled in-house.
02
STANDARD: Commercial recado rojo paste, good-quality pork shoulder marinated 4–6 hours, fresh pineapple grilled on a cast-iron ridged pan, store-bought but fresh corn tortillas, commercial quesillo or Chihuahua cheese.
03
ACCEPTABLE MINIMUM: Commercial recado rojo, 2-hour minimum marinade, pineapple seared in a dry skillet, packaged corn tortillas warmed on a comal, any low-moisture melting cheese that does not split under heat.

Sensory Tests

◇Marinade colour: deep brick-red, not orange. If it looks orange, the achiote paste is under-dissolved or of poor quality — push it through a fine sieve.
◇Pork on the grill: achiote should smell toasted and slightly smoky, never acrid. Acrid means the heat is too high or the marinade sugars are burning before the meat has cooked through — reduce heat slightly.
◇Pineapple: the surface should be mahogany and slightly sticky, and the flesh should yield to slight pressure without collapsing. Raw-tasting pineapple means insufficient caramelisation; it will overwhelm the pork rather than balance it.
◇Cheese melt on the comal: bubbling and cohesive, not pooling or separating. If it separates into greasy puddles, the cheese has too much fat or too much moisture — drain or switch variety.
◇Chopped pork texture: tender with slight resistance at the cut edges, not stringy or dry. Dry means overcooked; pull the next batch 30 seconds sooner.
