Mincemeat in Charred Chile Sauce (Picadillo en Chilmole)
Picadillo en chilmole is a coal-black, deeply savory mincemeat — ground pork and beef extended with Longaniza de Valladolid sausage and smoked ham — cooked down in recado negro, the charred-chile paste that defines the darker register of Yucatecan cooking. The dish belongs to the cocina económica tradition: fast, economical, built from a short list of ingredients that converge into something far more complex than the sum of its parts. It is served as a plated meal with white rice and beans, or spooned directly onto fresh tortillas as tacos, topped with salpicón. The chilmole base links it to older preparations of cubed pork in recado negro, but the ground-meat format — encountered at an artisans' fair in Peto — gives it a finer texture that drinks up the sauce completely. The dish improves markedly overnight, making it ideal for advance preparation.

Quality Hierarchy
01
RESERVE: Recado negro made in-house from dried and charred chilhuacle negro and mulato chiles, toasted spices, and charred tortilla — deepest complexity
02
STANDARD: Commercial recado negro paste from a Yucatecan producer (look for one listing charred chile, not food coloring, as the first ingredient)
03
ACCEPTABLE: Recado negro reconstructed from ancho and pasilla negro chiles toasted to the edge of burning, with dried epazote and allspice

Sensory Tests
◇After browning: meat should smell roasted, not steamed — if the pan smells wet and grey, raise the heat and drive off the moisture before proceeding
◇At sauce reduction: drag a spoon across the bottom of the pan — the channel should hold for 2 seconds before filling in
◇Finished dish: color is matte black, not shiny; texture is cohesive but not paste-like; aroma carries smoke, dried chile, and toasted cumin in equal measure
III · Cross-Cuisine Parallels
Cuban picadillo — ground beef with tomato, olives, and capers; same economic logic, contrasting bright acidity versus chilmole's charred depth Moroccan kefta in charmoula — spiced ground meat cooked in a sauce built on toasted whole spices; parallel layering of dry spice into wet sauce Texan chile con carne — ground or coarse beef absorbed into a deeply reduced dried-chile sauce; structural sibling to picadillo en chilmole
