Pipián Soup
A pre-Hispanic Mexican soup built on toasted, finely ground raw pumpkin seeds (pepitas) and chile seeds, simmered in reduced chicken broth with charred garlic, clove, and allspice until the liquid takes on a gentle, nutty body. Shredded chicken sits in the bowl below, and crumbled chile piquín arrives at the table as a sharp, fiery finish. The dish belongs to the pipián family — Mexico's oldest mole-adjacent sauces — where seeds rather than chocolate or dried chiles carry the thickening work. Diana Kennedy records this version on p.140 of The Art of Mexican Cooking as a regional soup form, distinct from the thicker pipián sauces served over meat.
