Mashed Plantain Croquettes with Pork Cracklings and Goat Cheese (Machuquillo)

Machuquillo arrives in Yucatán by way of Cuba, and further back by way of West Africa, where the ancestor dish — known as Fu Fu, Foufou, or Foutou depending on the country — was a thick paste of boiled starchy root vegetables pounded to a mush. The Cuban version replaces those roots with plantain, folds in garlic and chicharrón (pork cracklings), and serves the paste in a bowl under broth. This Hacienda Xcanatún adaptation goes further: the paste is formed around a core of chilled goat cheese, shaped into elongated croquettes, and deep-fried at 190°C (375°F) until the shell sets golden and the cheese softens within. The dish travels well as an accompaniment to rich proteins — duck magret above all — and holds its own as a first course or passed finger food at a reception. Its lineage is explicitly Afro-Caribbean, not Yucatecan Maya, and it should be presented as such.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Plantains at the precise green-to-yellow stage — starchy enough to hold structure, with just enough sugar to carry the spice-poaching notes
02
STANDARD: Fresh goat cheese with clean acidity and no ammonia; a log-style chèvre (Caprin or similar) works well
03
ACCEPTABLE: Spanish olive oil with moderate fruitiness — a young Arbequina; avoid peppery Tuscan styles that fight the chicharrón
04
AVOID: Fully ripe (yellow-black) plantains — they collapse into a wet paste that cannot be shaped; any pre-crumbled chicharrón sold in bags, which is almost always stale

Sensory Tests

◇Plantain is done poaching when a skewer meets no resistance and the cut face has shifted from stark white to a uniform pale ivory throughout
◇The paste is ready to shape when a small ball holds its form for 10 seconds on a cold plate without slumping or cracking at the edges
◇Correct frying temperature: a small piece of paste dropped in the oil should rise to the surface within 3 seconds and begin sizzling actively; slower means the oil is too cool
◇A finished croquette is done when the exterior sounds hollow with a light tap and the colour is deep amber, not pale gold
