Ibewahes: Bean and Squash-Seed Tamal

Ibewahes (Maya: 'tamal of beans and squash seeds') is one of the oldest tamales in the Yucatecan repertoire, rooted in pre-Columbian Maya cooking before European contact reshaped the peninsula's pantry. The masa is enriched with ground toasted squash seeds and black beans, producing a dense, earthy tamal that eats as a complete protein without any meat. It belongs to the Maya Heartland tradition — austere in ingredient list, demanding in technique — where the quality of the nixtamalized corn and the careful toasting of the pepitas determine everything. This is not a delicate tamal; it has weight, nuttiness, and a faint bitterness from the bean skins that earns its place at the center of the plate.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh masa ground from locally grown, properly nixtamalized white maize — ideally Nal T'eel (native Maya maize variety) — and home-rendered lard from pastured pork.
02
STANDARD: Good-quality masa harina (Maseca or equivalent) reconstituted with warm water to proper consistency, with lard or extra-virgin olive oil.
03
ACCEPTABLE: Commercially prepared fresh masa from a reliable tortillería, checked for salt content before adding more.

Sensory Tests

◇Toasted pepitas: a dry, popcorn-like smell and a pale gold colour with no dark spots. Any grey or brown = start over.
◇Finished masa dough: presses into a ball without cracking at the edges, does not stick aggressively to your palm, smells of fresh corn with a nutty back-note.
◇Cooked tamal: the banana leaf peels back cleanly; the masa surface is matte, not wet or translucent. Interior is firm and set — press with a fingertip and it springs back slightly.
◇Steam vigour: maintained at a hard boil throughout. If the pot goes quiet, the tamales are stalling.
