Tlacoyos de Requesón — Morelos (Zacualpan de Amilpas)
A traditional antojo from Zacualpan de Amilpas in Morelos, tlacoyos are thick, oval masa cakes stuffed with salted requesón — the fresh Mexican curd cheese Kennedy notes is closest in texture to ricotta — then cooked on a dry comal and finished tableside with gallitos. This is honest, regional street food with deep roots in the masa tradition of central Mexico, distinct from the black-bean-stuffed tlacoyos more commonly seen in Mexico City markets.
