Rabbit Ragoût with Alcaparrado

Salmí de conejo is a Yucatecan braised rabbit dish carrying the unmistakable fingerprint of Spanish colonial kitchens — alcaparrado, the brined mixture of capers, green olives, and pickled chiles, stirred into the braising liquid to produce a sauce that is simultaneously sour, saline, and deep with rendered rabbit fat. The dish belongs to the creolized layer of Yucatecan cooking, where Mediterranean pantry goods became permanent fixtures through four centuries of trade. Unlike the pib-cooked or achiote-driven preparations that define the peninsula's pre-Columbian identity, this ragoût draws on wine, vinegar, and aromatics to tenderise the lean, muscular meat of a wild or farm-raised rabbit. It is a formal table dish, not street food, and it reads as such in its long, unhurried cooking time and restrained heat. The name salmí (from the Spanish salpimentado lineage, referencing salt and pepper as foundational seasoning) signals a technique as much as a flavour profile: meat browned hard, then slow-cooked in its own juices with a layered acidic garnish.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE — Wild European rabbit (Oryctolagus cuniculus), sourced from a reputable hunter or game supplier; lean, dark-fleshed, and intensely flavoured. Requires no additional fat in the marinade.
02
STANDARD — Farm-raised domestic rabbit, available through specialty butchers. Milder in flavour; benefits from a longer marinade.
03
ACCEPTABLE — Heritage-breed chicken thighs and drumsticks if rabbit is unavailable; the technique holds, though the dish loses its characteristic gaminess and the Yucatecan identity thins considerably.
04
ALCAPARRADO — Buy a high-quality jarred blend with plump, firm olives and true capers; avoid pasty, over-processed versions where the brine has turned the olives grey and soft.

Sensory Tests

◇After browning: the rabbit skin should be deep amber, not pale tan — if it lifts from the pan without resistance, give it another 90 seconds.
◇During braise: the liquid should maintain a lazy, occasional bubble at the surface — a rolling boil will tighten the rabbit meat irreversibly.
◇Tenderness check at 1 hour: probe the thigh joint with a thin skewer; it should pass through with almost no resistance and the meat should give slightly when pressed with tongs.
◇Sauce consistency before serving: drag a spoon across the base of the pot — the line should hold for 3 to 4 seconds before the sauce flows back.
