Recado para Todo — All-Purpose Yucatecan Seasoning Paste

Recado para Todo — xa'ak' (Maya: to mix, the mixture itself) — is the foundational seasoning paste of Yucatecan cooking, a dense, aromatic blend of dried chiles, toasted spices, and herbs bound with sour orange juice or white vinegar. It functions as both a marinade, when thinned to a thick cream, and a sauce base, when let down further into stock or water. Without it, the logic of the cuisine collapses: rellenos, escabeches, and braised meats all depend on a correctly made recado for their depth and colour. Market vendors across Mérida, Valladolid, and Campeche sell hand-made cones of recado beside commercial bricks of brands like Marín and El Yucateco, but the home-ground paste made fresh remains the standard against which everything else is measured.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh-ground whole spices from a Yucatecan market (Mercado Lucas de Gálvez, Mérida), combined with artisanally made achiote paste and genuine naranja agria — the benchmark.
02
STANDARD: Good-quality Mexican oregano (Lippia graveolens, not European oregano), commercial achiote paste with no fillers, sour orange juice pressed same day.
03
ACCEPTABLE SUBSTITUTE: Pre-ground spices of recent vintage (within 6 months); equal parts white cane vinegar and fresh-squeezed sweet orange juice in place of naranja agria. Flavour will be flatter and sharper in equal measure.
04
AVOID: European or so-called Italian oregano (Origanum vulgare, Lamiaceae family) — the essential-oil profile is entirely different and will produce an off, medicinal result. Pre-ground allspice older than one year. Any coloring agent other than genuine achiote.

Sensory Tests

◇Toasted oregano: dry, loud crackle when pressed on the comal, intensely resinous smell with no burnt note. If it smells bitter or acrid, discard and re-toast a fresh batch at lower heat.
◇Finished paste colour: uniform deep brick-red throughout, not orange (under-blended achiote) and not brown (over-toasted spices or scorched garlic).
◇Paste texture: completely smooth against the back of a spoon — rub a small amount between fingertips and feel for grit. Any sandiness means the spices need more grinding.
◇Flavour balance before jarring: the paste should sting slightly from the sour orange and register the perfume of allspice and oregano before the warmth of achiote settles in last. If sour orange is absent, the paste will taste flat and one-dimensional.
