Warm Sautéed Zucchini Dip

Calabacita frita (Tzaajbil ts'ol in Maya — 'sautéed zucchini') is a cantina staple from Mérida's drinking-and-snacking culture, where botanas arrive unbidden alongside cold beer. The dish is deceptively plain: young zucchini (Cucurbita pepo) cooked down in lard or oil with onion, garlic, and habanero until the flesh collapses into a rough, scoopable mass. Served warm in a cazuela with fresh tortilla chips, it holds its heat long enough to work through a full round of drinks. Its place in Yucatecan cooking is that of an honest vegetable preparation — no pretension, no garnish — built entirely on timing and heat.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Zucchini picked at 15–18 cm (6–7 in) length, skin still taut, no soft spots — the smaller the squash, the less water and the more flavour
02
STANDARD: Market zucchini, medium size; squeeze out excess moisture after dicing if the flesh looks wet
03
AVOID: Overgrown zucchini with developed seeds; the flesh turns watery and bland regardless of technique

Sensory Tests

◇Onion stage: edges should show amber, not grey — grey means the pan was not hot enough
◇Garlic-habanero stage: smell should shift from raw pungency to something rounded and slightly smoky within 60 seconds
◇Zucchini mid-cook: the liquid that pools in the pan should boil away audibly; if it simmers quietly, raise the heat
◇Finish: press a piece with the back of a spoon — it yields completely but holds its shape; the pan bottom should show faint caramelised deposits
