Breaded Fried Squid Stuffed with Shrimp and Longaniza

Calamares rellenos is a Campechano seafood dish in which whole squid tubes are packed with a forcemeat of chopped shrimp and longaniza sausage, breaded, and deep-fried until the crust is shatteringly crisp and the filling is just set. It belongs to the coastal cooking of Campeche, where the Gulf yields large, meaty squid capable of holding a proper stuffing without collapsing in the oil. The longaniza brings pork fat and spice into a preparation that might otherwise read as straightforwardly maritime, pulling the dish toward the mestizo tradition of marrying land and sea in a single bite. At the table it is usually partnered with a sharp tomato-based sauce and lime wedges, the acid cutting through the fried crust and the richness of the sausage.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh whole squid from the morning catch, 12–15 cm tubes, cleaned to order — the filling holds its shape and the flesh remains tender at the 3-minute mark.
02
STANDARD: Good-quality fresh squid from a reputable fishmonger, cleaned the same day — acceptable moisture loss, minor toughening if overcooked.
03
ACCEPTABLE: Frozen squid tubes, fully thawed under refrigeration and thoroughly dried — workable but the texture will be marginally more chewy and moisture control is critical.
04
AVOID: Pre-stuffed or pre-breaded frozen products; squid with any ammonia smell.

Sensory Tests

◇Filling before stuffing: when a small ball is pressed between two fingers and released, it should hold its shape without weeping liquid — if it weeps, the shrimp was not dried properly.
◇Stuffed tube before breading: the tube should feel evenly firm and spring back very slightly when squeezed — a soft spot indicates an air pocket that will cause the filling to burst.
◇Oil temperature: a pinch of breadcrumb dropped in should sizzle immediately and rise to the surface within 2 seconds — slower means the crust absorbs oil before it seals.
◇Doneness in the oil: the crust should be an even deep amber, not pale gold — pale gold means the interior shrimp may still be translucent.
◇At the table: the crust should crack audibly when cut with a fork edge; the interior should be moist and opaque, with no grey or rubbery shrimp.
