Gollorías (Oaxacan Pecan Candies)
Gollorías are rustic Oaxacan nut candies — small spoonfuls of sugar syrup studded with whole pecan halves, dropped onto oiled paper and left to harden into opaque, ivory-coloured rounds. The technique is straightforward but the result is quietly elegant: a brittle, crystalline sugar shell encasing toasted pecans, with none of the amber bitterness of caramel. The candy is pulled from heat before any browning occurs, keeping the flavour clean and purely sweet. These are traditional confections sold in Oaxacan markets and made in home kitchens for festivals and everyday snacking alike.
