Recado para Pastor

Recado para pastor is one of the workhorse blends of the Yucatecan pantry — a dry-toasted, vinegar-bound spice paste that seasons pork destined for the comal or the open fire. Its backbone is Lippia graveolens (orégano yucateco, locally ak'ilche' or xaak che'), dried and toasted hard on the comal before grinding, so the volatile oils bloom rather than merely release. Allspice berries — Pimenta dioica, nukuch pool in Maya — give the paste its sweetly resinous middle note. Unlike recado rojo, which leads with achiote, recado para pastor leads with herb and spice, producing a darker, more aromatic marinade suited to fatty cuts. Mixed into sour orange juice or white vinegar, it becomes a penetrating rub where the dish lives or dies in the quality of the oregano and the patience of the grind.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Freshly dried Lippia graveolens sourced from Yucatecan markets or specialty importers; Pimenta dioica berries from Jamaica or the Gulf Coast, still fragrant when scratched; Citrus aurantium juice pressed the same day
02
STANDARD: Commercially dried Mexican oregano (confirm species on label), pre-ground allspice checked for freshness, sour orange juice from a reliable citrus supplier
03
ACCEPTABLE: Dried oregano of Mediterranean origin as a last resort — the flavour profile shifts significantly; compensate with a small addition of fresh marjoram; bottled lime-orange blend in place of Citrus aurantium

Sensory Tests

◇Toasted oregano: colour shifts from grey-green to a deep tobacco brown; aroma moves from green and grassy to sharp, almost medicinal — that is the volatile oil releasing correctly
◇Charred garlic: skin is papery and blackened in spots; when squeezed, the clove slides out and yields to light pressure with no raw, sharp bite remaining
◇Finished paste before acid: cohesive but crumbly, dark reddish-brown, smelling of warm spice and herb with no single note dominating
◇Paste after acid addition: colour deepens to a burgundy-brown; smell sharpens and brightens; consistency is spreadable without being wet — it should hold a ridge when dragged with a spoon
