Carne al Pastor — Grilled Pork in Yucatecan Spices with Pineapple

Carne al pastor arrived in Yucatán with the wave of Lebanese immigration at the end of the nineteenth century — shawarma and döner kebab refracted through Mexican chiles and achiote until the dish became something entirely its own. At Mérida's Mercado de San Benito, a full arcade of stalls runs trompos (spinning cones of marinated pork) in front of open flames, the outer crust shaved to order while pineapple drips caramelising juice down the rotating column. The home cook replicates this with thick-cut pork loin steaks grilled over wood-chip smoke, then carved on the diagonal and finished in a lard-and-recado rojo skillet that delivers the same caramelised bark. Pineapple juice in the marinade works double duty: its acidity brightens flavour and its bromelain enzymes soften the muscle fibres during the overnight brine-and-marinate cycle. The dish is served across Yucatán as tacos, tortas, or plated with rice and beans, always with chile sauce and garlic cream on the side.

The recipe is being written into the canon.

Sensory Tests

◇After blending, the marinade should be the colour of dried brick and thick enough to coat the back of a spoon without running off immediately.
◇On the grill, the surface of each steak should feel firm and spring back slightly when pressed at the 3-minute mark — if it still feels soft and yielding, leave it another 60 seconds before flipping.
◇When the reserved marinade hits the hot lard in the skillet, it should sizzle sharply and immediately — a dull hiss means the pan is not hot enough and the paste will stew rather than fry.
◇The finished sauce should be glossy and cling to the pork strips; if it looks watery, raise the heat briefly and stir until the excess moisture evaporates.
