Guanábana Agua Fresca

Agua fresca de guanábana is the cool, white-fleshed drink of Yucatecan market stalls and family tables, built from the pulp of Annona muricata — soursop — thinned with cold water and balanced with sugar. The fruit's flavour sits between ripe pineapple and banana, with a lactic tartness underneath that makes the drink both refreshing and substantial. In Yucatán the guanábana grows through the wet lowland heat of the peninsula; the drink is its most direct expression, requiring nothing more than ripe fruit, water, and restraint with the sugar. It belongs to the broad family of aguas frescas — cold fruit drinks blended to order and sweetened to taste — that have sustained market-goers across the Yucatán Peninsula for generations.

The recipe is being written into the canon.

Quality Hierarchy

01
Tree-ripened Annona muricata, harvested when the skin yields to thumb pressure and the fruit smells faintly of acetone and ripe banana — this is where the drink lives or dies
02
Cold filtered water; tap water with chlorine taste flattens the fruit's delicate lactic note
03
White cane sugar, not refined beet sugar; the faint molasses trace in cane sugar reads as depth, not sweetness

Sensory Tests

◇Blended pulp before straining: opaque white, no visible seed fragments, faint acetone-fruit aroma
◇After straining: the liquid should pour like thin cream, not water; heavy sediment means insufficient blending
◇Final drink: front palate tartness fading to a clean, mildly sweet finish with no bitter aftertaste from over-ripe or fermented fruit
