Gamja Tang: Pork Bone Soup
Pork spine bones blanched, then simmered for 2–3 hours with doenjang, gochugaru, garlic, and aromatics. Potatoes added in the final 30 minutes. The result is a deeply rich, spicy, gelatinous broth with fall-from-the-bone meat.

What to Pour
A cold Korean rice lager carries enough neutrality to cut the heat-forward spice without competing with the doenjang. Barley tea (boricha) served alongside is equally appropriate and traditional. Soju, if spirits are preferred, matches the sustaining, warming character of the soup.
