Squash-Seed Sauce for Papadzules

The squash-seed sauce — salsa de pepita in kitchen Spanish, sikil in Yucatec Maya — is the structural core of papadzules, the rolled tortilla dish that predates the Spanish arrival by centuries. It is a warm, green-tinted emulsion built from toasted, hulled Cucurbita pepo seeds ground to a paste and loosened with epazote-steeped water, carrying no tomato whatsoever. That second sauce — the red, charred-tomato salsa — is served separately alongside, never folded in. The two sauces remain distinct: confuse them and you have lost the dish. Sikil is also one of the oldest recorded ingredients in the Maya milpa tradition, documented in hieroglyphic form alongside tamales and masa at precontact sites across the peninsula.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Freshly shelled seeds from a mature Cucurbita pepo grown on a milpa — denser oil content, more pronounced flavour. Source directly from a Maya market vendor who shells on demand.
02
STANDARD: Commercially packaged raw hulled pepitas (Cucurbita pepo), unsalted and undyed. Check that they are green, not yellow — yellowing indicates age or wrong variety.
03
AVOID: Pre-toasted, salted, or flavoured pepitas; pumpkin seeds from Cucurbita maxima (larger, paler, inferior fat profile for this sauce).

Sensory Tests

◇During toasting: seeds should smell nutty and grassy, not sharp or acrid. One scorched seed colours the whole batch bitter.
◇After grinding: powder should clump lightly when pressed between fingers — that is the seed oil releasing. Dry and powdery means under-ground; paste means over-processed.
◇After blending with epazote water: colour is a muted sage green, not bright grass green. Vivid green means the epazote was over-steeped or the seeds were under-toasted.
◇During gentle heating: sauce thickens visibly at the spoon's contact. A clear line drawn on the back of the spoon should hold for three seconds — that is the right consistency for coating tortillas without making them soggy.
