Tamales Canarios (Canary Tamales)
A sweet, pale-yellow tamale from the eastern reaches of Michoacán, Mexico. Built on rice flour rather than masa, these festive tamales take their name from the canary-yellow color the egg yolks give the batter. The texture is closer to a steamed sponge than a traditional corn tamale — light, tender, and faintly sweet, studded with raisins. Diana Kennedy documents them as occasion food, typically served alongside atole or hot chocolate.
