To'biholoch — Tamales of Achiote-Stewed Pork Wrapped in Corn Husks

To'biholoch is the pork variant of Cháamchamitos de jolo'och, the rare Yucatecan tamal wrapped in dried maize husks rather than the banana leaf that clothes nearly every other tamal on the peninsula. The filling is Cochinita pibil — pork slow-cooked with achiote and bitter orange — bound with k'óol rojo, the masa-thickened red sauce that is where the dish lives or dies. Each tamal is folded into an empanada shape, sealed, and steamed. The corn husk wrapping imparts a faint mineral dryness that plays against the lard-rich masa and the acidic, annatto-red pork inside. Market versions in Mérida are frequently Mexican-style tamales in disguise; the Yucatecan original is distinguished by its k'óol rojo and the absence of any spiced ground-beef filling.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Cochinita pibil made from pork shoulder of a Yucatecan black-bristle pig (cerdo pelón yucateco), marinated overnight in freshly ground achiote recado and Seville bitter orange (Citrus aurantium) juice, cooked in a sealed vessel at 160 °C (320 °F) for 3–4 hours until the collagen has fully broken down
02
STANDARD: Commercially raised pork shoulder (bone-in, 30–35% fat), achiote paste from a reliable Yucatecan producer, Seville orange juice or a 2:1 blend of grapefruit and lime as substitute
03
MINIMUM ACCEPTABLE: Boneless pork butt, commercial achiote paste, lime juice alone — produces a leaner, less gelatinous filling with less complex acidity

Sensory Tests

◇K'óol rojo ready: coat the back of a wooden spoon and draw a line through it — the line holds clean for 5 seconds at 85 °C (185 °F)
◇Masa correct consistency: a ball pressed between the palms flattens without cracking at the edges and does not stick to dry hands
◇Tamal done: unwrap a test piece — the masa surface is matte, not shiny, and the husk peels away in one motion without tearing the masa
◇Filling set: when sliced, the k'óol inside should be a cohesive, brick-red gel, not a running liquid
