Peanut Sorbet

Sorbete de cacahuate (peanut sorbet) is one of the standout offerings at Yucatecan sorberterías — the street-side ice cream parlours that have anchored afternoon social life in Mérida and its surrounding towns for well over a century. The base is dairy-free: a citrus-scented simple syrup blended with natural chunky peanut butter, then churned and frozen. What reads on paper as an unlikely combination translates in the bowl to something rich, faintly savoury, and refreshing in equal measure. A pinch of cayenne lifts the fat without making the sorbet spicy. This is working-class street food at its most confident — no cream, no eggs, no apology.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: natural chunky peanut butter made from Yucatecan or Virginia-type peanuts (Arachis hypogaea), ingredients list reads peanuts and salt only — no hydrogenated oil, no added sugar
02
STANDARD: any commercial natural peanut butter with no stabilisers, smooth acceptable if chunky unavailable
03
AVOID: conventional commercial peanut butter containing palm oil or glucose syrup — the fat profile and sweetness level will throw the sorbet out of balance

Sensory Tests

◇Syrup stage: tilt the pan — the liquid should run clear as water, with no visible sugar crystals on the sides
◇Blending stage: stop the machine and drag a spoon through the mixture — it should coat the back with no visible peanut granules
◇Churn stage: the sorbet is ready when it holds a soft ribbon when the paddle is lifted and the motor audibly strains
◇Finished texture: a scoop should hold its shape for 90 seconds at room temperature before the edges soften
