Venison in Red Squash-Seed Sauce

Óom sikil bi kéej — the Maya name for this dish translates roughly as red squash-seed sauce with deer — is one of the oldest preparations in the Yucatecan repertoire, built on two ancient foundations: pib-cooked venison and pipián, the ground-squash-seed sauce that predates the Spanish arrival. The technique runs a double heat: venison first cooked in the p'íib (the underground oven), then finished low and slow in a sauce thickened with Pepita molida and bound with masa. Sourness is structural here: ciruela (Spondias purpurea, purple mombin) was the traditional acidulant, with tomatillo standing in when the plum season is closed. The dish comes from the town of Peto in the Sierra region of southern Yucatán. A bright-red fat rises to the surface as the stew finishes — skim it and drop it back as garnish, not waste.

The recipe is being written into the canon.

Quality Hierarchy

01
Wild Yucatecan white-tailed deer (Odocoileus virginianus yucatanensis) from managed populations: the benchmark, with lean, mineral meat that holds structure through the double cook
02
Brocket deer (Mazama americana or Mazama pandora): smaller, slightly richer, fully authentic to the Sierra region
03
Farm-raised venison (Cervus elaphus): acceptable but milder; marinate longer in recado rojo to compensate
04
Pork shoulder as a non-traditional substitute: use only if venison is completely unavailable; the dish loses its Maya lineage

Sensory Tests

◇Sauce at the right temperature shows a slow, lazy bubble breaking the surface every few seconds — not a rolling boil, not static. Anything faster risks breaking the seed emulsion.
◇Properly thickened pipián coats a wooden spoon and holds a clean line when you draw a finger across the back.
◇The surface fat should be vivid red-orange from the achiote in the recado; pale or yellow fat means insufficient recado or overcooked sauce.
◇Venison cubes should yield to gentle pressure without falling apart — firm at the edges, just cooked at the centre.
