Sautéed Chaya with Smoked Bacon

Chayas fritas — known in Maya as Tsaajbi chaay — is a workhorse side dish of the Yucatecan kitchen, built on chaya (Cnidoscolus aconitifolius), the large-leafed shrub that has fed the peninsula since pre-Columbian times. The leaves must be cooked before eating; raw chaya contains hydrocyanic glycosides that break down with heat, making the boiling or blanching step where the dish lives or dies. Smoked bacon — ideally the slow-cured, deeply smoky carne ahumada of Yucatán — provides the fat base and the salt, cutting through the slight mineral weight of the cooked greens. The result is direct, unadorned, and honest: a side that holds its own against the richly sauced main dishes of the Yucatecan table without competing with them.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh chaya leaves sourced the same day, with no yellowing or wilting; Yucatecan carne ahumada made from pork belly smoked over hardwood
02
STANDARD: Chaya leaves blanched and refrigerated up to one day ahead; commercial thick-cut smoked bacon with genuine smoke character
03
ACCEPTABLE: Pre-blanched chaya from a reliable market; any quality smoked pork product with enough fat to render a tablespoon of cooking fat

Sensory Tests

◇After blanching: the water should have turned faintly green and the leaves lost all stiffness; a leaf rubbed between fingers should feel completely soft with no leathery resistance
◇After rendering: the bacon fat should be clear and fragrant with wood smoke; no grey, steamed-looking fat remaining in the pan
◇At the finish: the chaya should glisten and cling together loosely; press a small amount — no liquid should weep out onto the plate
