Calabaza Tierna Guisada (Stewed Tender Pumpkin)
A quick Isthmus-style vegetable braise from El Camarón, Oaxaca, in which cubed tender pumpkin is cooked unpeeled with serrano chiles, then finished with generous amounts of fresh cilantro and mint. The herb finish is stirred in toward the end so the leaves wilt into the pumpkin rather than boiling away, leaving a bright, grassy fragrance against the mild sweetness of the squash. Diana Kennedy records this on the Isthmus route of her Oaxaca fieldwork. Traditionally served alongside a dried chile sauce — taviche or chile de árbol — which provides heat and depth the braise itself does not carry.
