Tepache de Cardón
A wild-fermented cactus-fruit drink from Cuicatlán, in the Cañada region of Oaxaca, made during the brief May season when cardón cactus (Pachycereus weberi) bears fruit. The tuna de cardón's naturally high sugar content drives a rapid two-day fermentation with no added sweetener or starter culture. Seeds strained from the liquid are reserved separately for use in sauces — nothing is wasted. The result sits somewhere between a lightly sparkling agua fresca and a low-alcohol tepache: refreshing, faintly sour, and deeply regional.
