Tortas al Pastor — Grilled Achiote Pork and Pineapple Sandwich on French Bread

Tortas al pastor are a direct translation of taco al pastor logic onto Pan francés — the French-style baguette that Yucatecans split lengthwise and load with the same seared, achiote-red pork and caramelized pineapple that spins on the trompo outside the market stalls. The sandwich format is listed in Mérida taquerías alongside tacos and plated plates as a routine option, not an afterthought. What makes the al pastor iteration distinctive is the double heat: the brined pork loin is grilled over charcoal with wood smoke to an internal 60 °C (140 °F), then carved thin on the diagonal and seared again in a lard-and-recado rojo pan that coats every slice with a second lacquer of red spice. That second sear is where the dish lives or dies. The lineage runs from Lebanese shawarma through the trompo culture that took root in Mérida's Mercado de San Benito, where more than a dozen stalls under shared awnings have made al pastor a daily, thoroughly Yucatecan fixture.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Heritage-breed pork loin (e.g. Yucatecan black pig) with pronounced marbling; house-ground Recado para pastor from dried whole chiles; pineapple from Tizimín-area plantations, fully ripe and fragrant at the core
02
STANDARD: Commercial pork loin, well-trimmed; quality pre-mixed recado paste from a Mérida market; ripe supermarket pineapple
03
ACCEPTABLE: Boneless pork shoulder substituted for loin (adjust grill time); powdered recado reconstituted with vinegar and achiote; canned pineapple slices, well-drained and patted dry before grilling

Sensory Tests

◇Marinade after pan-cooking: colour shifts from orange-red to deep brick; sauce breaks slightly from the lard — that separation signals the raw chile taste has cooked out
◇Pork off the grill: juices run clear at the thickest cut; internal probe reads 60 °C (140 °F) and the meat holds its shape when pressed
◇Second sear: the recado coating on each slice should crackle audibly when it hits the pan and turn mahogany-brown within 90 seconds — if it steams rather than sears, the pan is not hot enough
◇Pineapple on the grill: flesh should yield to light finger pressure and the cut surface caramelizes to amber; pale yellow with no char means the grill was too cool
