Hanjeongsal-gui — Pork Cheek Grilling (항정살구이)

Hanjeongsal (항정살) is the jowl muscle of the pig — a small, rare cut from the cheek and neck junction yielding only 300–400g per animal, making it one of the most sought-after and expensive cuts in Korean BBQ. Its structure is uniquely layered: a band of fat separates distinct lean muscles, producing alternating chew and richness in a single bite. Over charcoal, the fat band renders to glassy translucency while the lean portion chars lightly. Hanjeongsal requires almost no preparation — it speaks entirely through its natural architecture. The moment of eating the fully rendered fat band alongside the charred lean muscle is where this dish lives.

The Method

1
Combine the sesame oil and Cheonilyeom coarse salt in a small bowl, stirring briefly so the salt begins to dissolve into the oil and the two will coat each piece evenly rather than landing in dry pockets. Set the bowl aside at the table. Place the doenjang in a separate small dish.
2
Bring a charcoal grill to high direct heat, so the grate is fierce enough to colour the fat quickly before the lean muscle has time to tighten. Lay the hanjeongsal slabs flat on the grate and do not press or move them, so the fat band renders in its own heat rather than being squeezed out onto the coals. This is where the dish lives or dies — watch the fat band: when it turns from white and opaque to glassy and translucent, flip once, because a moment beyond that and the fat dries and the lean tightens beyond recovery.
3
Grill the second side briefly until the lean muscle carries light char marks on its surface, pulling the slabs the instant those marks appear so the interior stays yielding and the fat retains its rendered softness.
4
Transfer immediately to the table, because the fat solidifies rapidly on cooling and the slice must be eaten directly off the grill. Dip each piece in the gireum-jang, or draw a thin smear of doenjang across the surface before eating.

Quality Hierarchy

01
Reserve — The exact cheek-to-neck junction sub-cut, confirmed by a centred fat band of 4 mm or more, sourced from a well-fed mature pig; requested specifically from the butcher by that distinction.
02
Estate — Hanjeongsal sliced to order at 1 cm or above, fat band clearly centred through the slab, from a reputable Korean pork supplier.
03
Market — Pre-sliced hanjeongsal from a Korean grocery; verify the fat band runs through the centre, not along one edge.
04
House — Any honestly labelled pork jowl cut at 1 cm thickness; confirm fat distribution before purchase — a mis-labelled neck slice without the centred fat band cannot replicate the dish's architecture.

Sensory Tests

◇Sight. The fat band shifts from solid white and opaque to glassy and translucent — the signal to flip.
◇Sight. Light char marks appear on the lean muscle of the second side — the signal to remove from the grill.
◇Touch. The rendered fat yields softly under the teeth when eaten immediately; any resistance or waxy firmness indicates the slice has cooled too long or the fat was not fully rendered.
◇Where it lives or dies. The fat band must render to full glassy translucency over high charcoal heat before the slice is flipped — stop short and the fat is raw and heavy; go past and it dries opaque, the lean tightens, and the defining quality of the cut is lost.
