Recado para Papadzul

Recado para Papadzul is the spiced squash-seed paste at the structural centre of papadzules, the pre-Columbian masa-and-egg dish from the northern lowlands of Yucatán. Unlike the chilli-forward recados built around achiote or charred mulato chiles, this one derives its body and fat from toasted Cucurbita peppo seeds and its aromatic lift from dried Lippia graveolens oregano and Pimenta dioica allspice — both grown on the peninsula. The result is a dense, olive-green paste that cooks thin down with stock into the sauce enveloping the rolled tortillas. It carries no tomato; the contrasting red tomato sauce is a separate preparation applied on top. Without this recado there is no papadzul.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Raw pepitas sourced directly from Yucatecan markets or a verified Cucurbita peppo crop; epazote cut fresh the same day; allspice from a Yucatán or Jamaican tree, whole berries ground to order
02
STANDARD: Commercially packaged raw pepitas (not pre-roasted), dried epazote rehydrated in warm water, pre-ground allspice used within six months of opening
03
ACCEPTABLE: Store-bought pepita meal combined with good-quality dried epazote and freshly toasted spices — functional but flatter in colour and aroma

Sensory Tests

◇Toasted pepitas: a single seed pressed between thumb and finger should feel firm and dry, never tacky; the aroma is warm and grassy, not bitter or acrid
◇Blended paste: colour should be a coherent olive-green with no grey or brown tones; grey signals over-toasted seeds or oxidation
◇Finished sauce consistency: drag a finger across the back of a coated spoon — the line should hold cleanly for 3 seconds before the edges begin to creep back
◇Temperature check before service: dip a probe thermometer — if the sauce exceeds 80 °C (176 °F) it will break; pull from heat immediately and stir in a splash of cold stock
