Fish Fillet in Garlic-Citrus Sauce

Filete al mojo de ajo is a coastal Yucatecan preparation built on one of the peninsula's most versatile pan sauces: mojo de ajo, a slow-cooked reduction of sliced or crushed garlic in neutral oil or lard, finished with Seville orange juice (naranja agria) and its characteristic bitter-acid punch. The dish belongs to the same family as pulpo al mojo de ajo and camarones al mojo de ajo — the sauce is constant, the protein changes with the catch. White-fleshed Gulf fish such as grouper (mero, Epinephelus spp.) or snook (robalo, Centropomus undecimalis) are the regional standard: firm enough to hold in the pan, mild enough not to fight the garlic. The result is bright, lip-coating, and unapologetically garlicky, with citrus acidity cutting through the fat at the finish.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Wild-caught, day-boat Gulf snook (robalo, Centropomus undecimalis) or grouper (mero, Epinephelus morio) from Celestún or Progreso — purchased the morning of cooking, eyes clear, gills red, flesh spring-firm
02
STANDARD: Fresh farmed grouper or locally sourced red snapper (Lutjanus campechanus); still excellent if used within 24 hours of purchase
03
ACCEPTABLE: High-quality fresh tilapia (Oreochromis niloticus) or catfish (Ictalurus punctatus) for landlocked kitchens — neutral flavour holds the mojo well, though texture is softer
04
AVOID: Frozen fillets with cell-damage weeping, pre-portioned fish that has sat on ice more than two days, or any fish with an ammonia smell

Sensory Tests

◇Garlic in the mojo: when the raw, pungent edge has completely given way to a sweet, nutty, almost caramel-adjacent aroma and the colour is pale gold throughout — not ivory, not brown — the mojo base is ready
◇Sear doneness by sight: the opacity line climbing up the fillet side should reach two-thirds before you flip; if flesh still looks translucent at the base after 4 minutes, your pan was not hot enough
◇Pressing test: a properly cooked fillet at 57°C (135°F) interior resists a gentle finger-press the way a firm ripe peach does — it gives slightly and springs back; if it compresses without resistance, it is overdone
◇Mojo consistency after citrus addition: should coat the back of a spoon lightly, not run off like water — if it remains thin after 90 seconds of reduction, reduce another 30 seconds; if it seizes into a paste, add a splash of warm water and stir
