Fried Onion with Black Beans

Cebolla frita con frijol is a foundational preparation in the Yucatecan taco tradition, functioning as both filling and structural anchor for panuchos made in and around Kanasín, the village outside Mérida that became synonymous with the form. Frijol colado — strained, purée-smooth black beans cooked with epazote — is pressed into the pocket of a panucho tortilla, then the whole is fried in hot oil until the surface darkens and the bean layer sets firm. The fried onion component, deeply caramelised rather than simply softened, bridges the earthy bean interior and the pickled cebollas encurtidas piled on top. Together these two elements — bean filling and cooked onion — define the character of the panucho from the inside out. Without both working in tandem, the taco collapses into something generic.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Masa ground same-day from nixtamalized Yucatecan white criollo corn; frijol colado made from local black beans cooked with fresh epazote; onions fried slowly in lard
02
STANDARD: Good-quality dried masa harina (nixtamalised) rehydrated correctly; canned black beans puréed and reduced to the correct consistency; onions fried in neutral oil
03
ACCEPTABLE: Commercial masa, canned beans used straight from the tin without reduction — the bean filling will be too wet and the shell will break

Sensory Tests

◇Tortilla pocket: when you press the inflated tortilla gently, it should feel like a thin air-filled pillow — springy, not dense. Dense means the pocket did not form fully.
◇Frijol colado consistency: drag a spoon through the cold purée. The channel should hold its shape for at least 5 seconds before the sides collapse. Anything looser will burst the shell.
◇Fried onion colour: target deep amber to dark honey — hold a slice to the light. If it is pale gold, it lacks the sweetness the dish needs. If it is brown-black, it will read as bitter against the earthy beans.
◇Finished panucho: the shell should produce an audible crack when pressed at the edge. A dull thud means oil temperature was too low and the tortilla absorbed fat rather than crisping.
