Minted Meatballs in Broth (Albóndigas con Yerbabuena)

Albóndigas con yerbabuena are small, tightly packed meatballs built on Picadillo de especias — a spiced mixture of ground pork, beef, longaniza, and smoked ham — folded through with fresh mint at two points: inside the meat itself and again into the sofrito base. The broth is a beef stock deepened with charred garlic, Mexican cinnamon, and Recado para puchero, then finished with sherry vinegar, whole olives, capers, and breadcrumbs that pull the liquid into a sauce just thick enough to coat the meatballs without masking them. The result is simultaneously rich and bright, the fat of four meats cut cleanly by the vinegar and the mint. This is cocina económica at its most representative — one pot, straightforward technique, and a flavour architecture that traces directly to Andalusian and Moorish kitchens by way of the Yucatecan peninsula. It is daily food, served over arroz blanco, on the menu boards of family-run dining rooms across Mérida and the towns beyond.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE — Fresh-ground pork shoulder and beef chuck ground to order the same day; Longaniza de Valladolid from a Yucatecan producer; fresh Mentha spicata from a market or home plant; homemade beef stock reduced from roasted bones
02
STANDARD — Pre-packaged 80% lean ground pork and beef from a reliable butcher; quality smoked Spanish-style chorizo substituting for longaniza; dried spearmint rehydrated (reduce quantity by half); good commercial beef stock with no added MSG
03
MINIMUM — Pre-packaged lean ground beef and pork (above 85% lean risks dry meatballs); any smoked sausage; dried spearmint; commercial stock cubes dissolved in hot water — acceptable but the broth will lack depth

Sensory Tests

◇MEATBALL MIXTURE READY: The combined meats hold their shape when pressed into a ball and do not crack at the edges — if the surface crumbles, the mixture is too cold; if it slips apart, it needs another minute of chilling.
◇CRUST FORMED: The browned surface lifts cleanly from the pan without tearing. A dark mahogany colour with no raw-grey patches. The meatball feels slightly firmer on the outside than when raw.
◇SOFRITO COOKED DOWN: The tomato and onion mass loses its bright shine and deepens to a brick-red paste. A wooden spoon dragged across the base of the pot leaves a clear trail that closes slowly — 3 to 4 seconds.
◇MEATBALLS COOKED THROUGH: Internal temperature 74°C / 165°F on an instant-read probe. When pressed gently with a spoon, the meatball pushes back with uniform resistance — no soft spot at the centre.
◇BROTH CONSISTENCY: Dip a cold spoon into the finished broth and hold it up — the liquid should cling in a thin, even film rather than running off in sheets. If it pools heavily, the breadcrumb slurry was too much; thin with a splash of stock.
