Chileatole Mixteco (Mixtec Chileatole)
A pre-Hispanic corn-and-chile porridge-soup from San Isidro Yododeñe in the Mixteca Alta highlands of Oaxaca, where the kitchen has changed little in centuries. The dish straddles the boundary between atole and soup: fresh corn kernels are puréed to thicken the broth while whole rounds of cob add body and sweetness. Dried guajillo and chile de árbol bring mild fruit and sharp heat in turn. Epazote (Dysphania ambrosioides) finishes with its distinctive resinous character. The result is rustic, filling, and tied to a very specific place.
