Pheasant in Red Squash-Seed Sauce

Faisán en pipián rojo (pheasant in red squash-seed sauce) is a celebratory game dish rooted in the milpa tradition of the Yucatán Peninsula, where squash seeds — óom sikil in Maya — form the backbone of the sauce rather than a mere accent. The 'faisán' named in Yucatecan cooking is not the European ring-necked pheasant but the great curassow (Crax rubra), a large forest bird historically hunted across the monte. Toasted pepitas build a dense, nutty base; dried chiles and ripe tomato give the rojo its colour and acid edge. The result sits between a thick mole and a European fricassee: substantial, earthy, faintly smoky, with the richness of seed oil running through every bite. This is feast food — served at reciprocity gatherings and saint's-day celebrations where the bird's presence announces occasion.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE — Wild great curassow (Crax rubra) from a licensed source, freshly milled masa tortillas, raw hulled pepitas from a Mexican market ground to order
02
STANDARD — Farm-raised European pheasant (Phasianus colchicus), good-quality raw hulled squash seeds, good dried guajillo and ancho from a reliable supplier
03
ACCEPTABLE — Guinea fowl (Numida meleagris) as a substitute; pre-ground squash-seed flour if freshly toasted seeds are unavailable; dried chiles rehydrated from vacuum-sealed packs

Sensory Tests

◇Squash-seed toast: seeds should puff visibly and smell of roasted nuts; any brown colour means the oil has broken and the sauce will taste bitter
◇Chile toast: dried skins should soften and release a warm, chocolate-smoke aroma within 20 seconds; smoke turning acrid means the chile is scorched and must be discarded
◇Sauce fry: the surface will transition from a bright red foam to a deep brick-red gloss; the fat visibly separating around the edge of the pan signals the raw taste has cooked out
◇Finished pipián: drag a spoon through the centre of the sauce — it should hold the parted line for 2 seconds before flowing back; too thin means insufficient seed, too thick means not enough broth
◇Serving temperature: sauce should steam gently; any active bubble will break the squash-seed emulsion and produce a greasy, curdled surface
