Vaporcitos de Carne Molida — Small Steamed Tamales with Mincemeat and Tomato Sauce

Vaporcitos (chan ooxontbil waaj in Yucatec Maya, meaning small steamed bread) are the daily tamal of the Yucatán Peninsula — bite-sized, banana-leaf wrapped, and steamed rather than baked. This mincemeat version, also called tamalitos ticuleños, departs from the k'óol rojo (the maize-thickened red sauce) that anchors the chicken, pork, and venison variants: the filling is a spiced picadillo, and the sauce served alongside is a cooked tomato preparation, Tomate frito. The result is a tamal with a softer, more savory-sweet interior and a bright tomato counterpoint at the table. These appear across the peninsula's markets and home kitchens as everyday food, not ceremonial fare. Their character is mild and yielding — the masa rich with lard, the filling moist, the banana leaf lending a faint green, grassy note to the steam.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Masa made from freshly nixtamalised local maize (either white or yellow criollo varieties) ground on a stone mill, beaten with good-quality lard from free-range pork to a light, airy consistency
02
STANDARD: Commercial masa harina rehydrated and beaten with lard — acceptable texture, slightly flat maize flavour
03
MINIMUM: Pre-made commercial tamal masa — use only if time is critical; check salt and fat levels before filling

Sensory Tests

◇Masa readiness: drop a small ball into cold water — it should float. If it sinks, beat in more lard and continue working the dough.
◇Leaf pliability: a properly prepared banana leaf folds around your hand without cracking or whitening at the fold.
◇Steam temperature: the lid should rattle gently and vent steady steam throughout the hour — a weak simmer means the tamales will be dense and undercooked.
◇Doneness: the banana leaf should peel away cleanly, leaving a smooth, lightly shiny surface on the masa. Any wet smearing means another 10–15 minutes.
