Chaw Popox (Cacao Atole with Foam)

A ceremonial cacao drink from San Mateo del Mar, Oaxaca, prepared by the Huave (Ikoots) people of the Tehuantepec isthmus. Toasted cacao beans are ground on a metate with cinnamon and the woody stem of the ncheed plant — a local foaming agent — until a smooth paste forms. That paste is then beaten vigorously with water to raise a dense, cold foam that is lifted off the surface and floated over hot atole in the bowl. The technique is ancient: foam, not heat, is the finished product, and the two temperatures meet only at the moment of serving.

The Method

1
Toast cacao beans over dry heat until hulls crack and separate. Peel thoroughly. Set aside.
2
On a metate, grind the stripped ncheed stem together with cinnamon pieces until the woody fiber begins to break down into a rough paste.
3
Add cacao beans gradually to the metate. Grind in, then repeat the full grinding cycle. Complete eight passes in total, until the combined paste is smooth, cohesive, and glossy.
4
Transfer paste to a deep vessel. Add 1 litre of cool water and mix to dissolve.
5
Beat the mixture vigorously — by hand, molinillo, or by pouring between two vessels at height — until a dense foam accumulates on the surface.
6
Scoop foam immediately and place atop hot atole. Serve at once.

Sensory Tests

◇Tilt the bowl gently after the foam is floated: genuine foam raised from the ncheed-cacao paste holds its shape and does not immediately melt into the atole beneath — it should remain distinct for at least two to three minutes at the table.
◇Press a small amount of foam to the roof of the mouth with the tongue: it should dissolve almost instantly into a concentrated burst of roasted cacao bitterness and cinnamon warmth, not a neutral or milky sweetness, confirming that the foam itself carries the flavour load.
◇Smell the paste on the metate before water is added: the aroma should be dry, roasted, and slightly resinous from the ncheed — any sour, rancid, or overtly sweet note indicates oxidised cacao or the wrong grinding substrate.
◇Where it lives or dies. The dish lives or dies at the moment the foam is separated from the beating vessel and floated onto the hot atole: if the foam is too thin it sinks immediately and the two-temperature architecture collapses into a single lukewarm liquid, and if the atole is too aggressively hot it destabilises the foam from below before the bowl reaches the drinker.
