Seafood in Herbed Garlic Sauce

Mariscos en verde al mojo de ajo is the coastal Yucatán kitchen's answer to the question of what to do when the catch is good and the garlic is plentiful. Mixed seafood — shrimp, fish fillet, and octopus in combination — is cooked fast in a sauce built from slow-roasted garlic, citrus juice, and fresh green herbs, most often epazote and flat-leaf parsley. The verde in the name is not a cooked green sauce in the pipián sense; it is the fresh, bright character that herbs and Seville orange juice give to rendered garlic fat. This is a port dish, quick by design, at its best within minutes of leaving the pan.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh-caught Gulf shrimp (Litopenaeus setiferus), same-day landed reef fish such as Yucatecan grouper (Epinephelus morio), and locally sourced Octopus maya, combined with hand-squeezed naranja agria and freshly charred garlic roasted on a clay comal
02
STANDARD: Farmed Pacific white shrimp (L. vannamei), fresh snook or corvina fillet, common octopus (O. vulgaris), with the Seville orange approximation of navel orange and lime juice
03
ACCEPTABLE: Good-quality frozen shrimp thawed overnight under refrigeration, frozen fish fillet of firm white flesh, pre-cooked octopus from a reputable supplier — provided the garlic is roasted fresh and the herbs are not dried

Sensory Tests

◇Roasted garlic: the cloves should give immediately under thumb pressure through the skin, with a sweet, slightly smoky smell — no raw-allium sharpness remaining
◇Octopus pre-cook: a toothpick inserted into the thickest tentacle section should pass through with one firm push, not saw through. Any springback means more time is needed
◇Shrimp doneness: the loose C-shape is the target. Press the thickest part of one shrimp — it should feel like a firm handshake, not a fist. The colour change from translucent grey to opaque coral-pink happens in seconds at high heat; watch, not time
◇Sauce consistency: after the citrus hits the pan, the liquid should reduce to a loose, glossy coating — not a pool, not a dry glaze. Tilt the pan; the sauce should flow slowly, not run freely
◇Herb colour at plating: epazote and parsley should be bright, deep green. Any yellowing or grey-green tone means the heat was too low or the pan time too long after adding the herbs
