Jícama and Mandarin Orange Snack with Chile and Lime (Xek)

Xek (xe'ek / xek', Maya: roughly 'mixture' or 'to mix') is a market snack and side dish built on the clean crunch of raw jícama cut against the bright acidity of mandarin orange, sharpened with habanero and lime. It belongs to the Yucatán Peninsula — sold by street vendors, set out at midday meals, eaten in hand or spooned alongside heavier plates. The dish asks almost nothing of the cook but exacting knife work and a calibrated habanero hand. Its value is freshness: assembled close to serving time, it holds the contrast between a cool, starchy jícama and juicy citrus that softens quickly once cut. Simple in structure does not mean simple in result — get the balance of acid, heat, and salt wrong and it collapses into a dull bowl of fruit.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE — Young market jícama under 500 g (1 lb 2 oz), with dense white flesh and no fibrous strands; fresh-pressed lime juice used within the hour; ripe mandarin oranges with strong perfume and no sourness; habanero from a Yucatecan market, orange or red, harvested ripe
02
STANDARD — Larger jícama with some fibrous texture trimmed out; commercial lime juice acceptable only if freshly opened; any ripe mandarin variety; habanero from a Latin grocery at peak ripeness
03
AVOID — Jícama that shows browning in the flesh or a hollow centre; bottled lime juice with preservatives; clementines or navel oranges as a substitute (the flavour profile shifts significantly); dried or powdered habanero as the sole heat source

Sensory Tests

◇Jícama baton should snap cleanly when bent — any flex or soft give means the root is past its prime
◇Mandarin segments should release juice on light pressure without collapsing; a dry segment adds nothing
◇After 10 minutes of resting, the jícama surface should appear lightly glossy from the lime and salt but the interior should still resist the tooth with a clean crunch
◇The habanero heat should arrive 5–10 seconds after tasting, not on contact — if it bites immediately and hard, reduce the quantity
◇Smell the bowl before serving: you should get lime oil, mandarin zest, and the faint grassy heat of habanero together; if lime dominates to sourness, the balance is off
