Gorditas Hidalguenses
A thick, filled masa cake from the state of Hidalgo, scented with anise and enriched with pork lard. The gordita is pressed around a savory filling — typically refried beans or chicharrón prensado — then cooked dry on a comal until the exterior develops a firm, lightly browned crust while the interior stays tender. The lard continues to distribute through the masa as the gorditas rest off the heat, making patience after cooking as important as the cooking itself.
