Tortillas for Panuchos

The tortilla used for panuchos is not a standard masa round. It is pressed thinner than an eating tortilla, cooked on a comal until it puffs — forming an interior air pocket — then slit open while still hot to receive a filling of seasoned black beans before the second pass on the griddle. That pocket is where the dish lives or dies. Without it, you have a tostada; with it, you have a panucho. The technique demands masa of the right hydration and a comal at the right temperature: too cool and the pocket never forms, too hot and the tortilla scorches before it can inflate. This is a craft skill specific to the Yucatecan street-food tradition, not a variation of any other Mexican tortilla method.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh masa ground same day from nixtamalized Yucatecan white field corn, pocket forms reliably and the tortilla has a faint mineral sweetness from the lime-cooked corn.
02
STANDARD: Fresh masa from a trusted tortillería using local dried corn — acceptable hydration, pocket forms with attention to comal temperature.
03
ACCEPTABLE: Masa harina (Maseca or equivalent) reconstituted with warm water at roughly 1:1.1 ratio by weight. Pocket formation is less reliable; hydration must be tested ball by ball. Flavour is flatter.
04
AVOID: Pre-formed commercial tortillas — they have no uncooked pocket to exploit and will not function for panuchos.

Sensory Tests

◇Hydration check: Press a ball between your palms. The edges of the flattened disc should not crack. If they do, add water. If the dough sticks and tears, it is too wet — work in a pinch of dry masa.
◇Comal temperature: A drop of water should skitter and vanish in under 2 seconds. If it sits and steams slowly, the comal is too cool — the tortilla will dry out before puffing.
◇Pocket confirmation: The tortilla should balloon visibly, the upper layer lifting away from the lower in a single taut dome. If only a small bubble appears at one edge, press lightly around it with a folded cloth to encourage the steam to distribute.
◇Slit timing: The tortilla must be slit while still hot. Once it cools even slightly, the layers bond and the pocket seals shut.
